摘 要:考察了碱种类、碱浓度以及温度等因素对皮胶原纤维在碱性环境中水解的影响。结果显示皮胶原纤维在碱性溶液中的水解作用,随碱浓度的增大而加剧,随温度的升高而加剧。温度与碱浓度相比较,温度对水解的影响比浓度对水解的影响更为突出。尤其当温度超过30℃后,即使在较低浓度碱溶液中,也对胶原纤维有强烈的水解作用。在低温条件下,不同碱系统对胶原纤维水解影响程度不同,胶原纤维在0.05 mol/L NaOH溶液中水解最剧烈,0.05 mol/L KOH次之,饱和石灰水中最缓和;而温度在35℃时,以上碱溶液中胶原纤维的水解程度几乎相同,这是碱与热处理共同作用的结果。The influence of several factors on the hydrolysis of collagen fiber under alkali solution was analyzed. The results showed that hydrolytic ability was increased by the rising of alkali concentration and temperature. Contrast to the alkali concentration, temperature of the system showed more influence to the hydrolysis, especially while the temperature was over 30~C, the collagen fiber was hydrolyzed largely even in low concentration of alkali systems. Different alkali systems showed different hydrolysis abilities. Under the conditions of lower temperature, the hydrolytic ability series of alkali from high to low were as the follows: sodium hydroxide, potassium hydroxide and calcium hydroxide. While at 35 ℃, the hydrolytic ability of different alkali almost was as the same. That was related with both alkali and heat.
