摘  要:果蔬的含糖量、含酸量、含水量和果肉软硬度程度等是表示其内部品质的重要指标,而且这些指标多采用破坏性的物理化学实验方法检测。为此,实验研究了番茄的电特性如相对介电常数、电阻率等与酸度、含糖量、含水率和硬度之间的关系。实验结果表明,番茄的相对介电常数和硬度之间、番茄的损耗角正切值和含酸量之间、番茄的相对介电常数和含酸量之间、番茄的电阻率和含水量之间变化趋势较显著,二次拟合曲线方程相关系数较高。利用DPS数据处理系统进行了逐步回归分析,得出番茄的硬度、含糖量、含酸量、含水量对电阻率的回归方程,为利用电特性进行番茄内部品质的无损检测提供了理论依据。The acidity, sugar content, moisture content, hardness are important quality targets of fruit and vegetable and they are mensurated in physical and chemical testing by grinding or crushing. Has experimental studied on the relation between tomato ~ electricity characteristic such as the relative permittivity, specific resistance, etc, and the acidity, sugar content, moisture content, hardness. The result indicated that the relations of between tomato ′s relative permittivity and hardness, tomato ′ losses tangent and acidity, tomato ′s relative permittivity and acidity, tomato ′s specific resistance and moisture content is remarkable and the relational curve is steady. The correlation coefficients are higher, using the DPS data processing system the gradually regression analysis has been done and the regression equation has been obtained. The theoretical basis is provided for useing the electricity characteristic to no damages test tomato′s interior quality target.
