摘 要:以对-香豆酸、咖啡酸和绿原酸标准品为材料,研究溶液pH、溶剂、浓度对这三种酚酸荧光特性的影响。结果表明:影响它们荧光图谱的因素为pH和溶剂种类,随溶液碱性的增强其荧光峰均发生了明显的红移;这三种酚酸与溶剂(水、甲醇、二甲基亚砜)之间有明显的氢键效应,导致其荧光图谱不同:与水溶剂相比,当以甲醇或二甲基亚砜为溶剂时,其Stoke位移值均明显变小。影响这三种酚酸荧光强度的因素主要是pH和浓度,若以水为溶剂,对-香豆酸(λex/λem=350/440 nm)溶液在pH10、浓度为10 mg/L时的荧光强度最强;咖啡酸(λex/λem=385/465 nm)在pH8.5、浓度300 mg/L时的荧光强度达到最大值;绿原酸(λex/λem=380/490 nm)在pH11.5、浓度90 mg/L时的荧光强度最大。The effects of the pH, solvents, concentration on the fluorescent characteristic of the p - coumaric acid, caffenic acid and chlorogenic acid were studied. The results showed that the factors which affected the fluorescent spectra of the three phenolic acids were pH value and solvents. The maximum excitation and emission wavelength of the three phenolic acids moved to the long wavelength with the enthance of alkalinity. There had obvious effects of hydrogen bonds between the three phenolic acids and solvents ( water, methanol, dimethyl sulfoxide). When p- coumaric acid, caffenic acid and chlorogenic acid was dissolved in methanol, respectively their Stoke' s shift value became smaller than one in water. The main influence factors of the fluorescent intensity were pH and concentration. It reached the maximum intensity when pH of solvent was 10 or the concentration of aqueous p - coumaric acid ( λex/λem = 350/440 nm) was 10 mg/L, and pH of solvent was 8.5 or the concentration of aqueous caffenic acid ( λex/λem = 385/465 nm) was 300 mg/L, and pH of solvent was 11.5 or the concentration of aqueous chlorogenic acid( λex/λem = 380/490 nm) was 90 mg/L.
