摘 要:[目的]研究酸雨对双低油菜各项品质指标的作用,为生态环境对农产品品质调控及防治酸雨对农作物危害提供科学依据。[方法]以秦优七号双低油菜为供试品种,通过大田模拟酸雨喷淋试验,研究酸雨胁迫后双低油菜籽粒中硫苷和芥酸含量以及各项品质指标的动态变化。[结果]随着酸雨酸度的增加,双低油菜籽粒中硫苷、芥酸、亚油酸和花生酸含量则相应升高;而双低油菜籽粒蛋白质、氨基酸、粗脂肪、可溶性糖、硬脂酸和油酸等含量则相应降低;双低油菜籽粒还原糖、总酸度和亚麻酸等含量随酸雨pH值降低呈先升后降的变化。酸雨pH值≤3.5,双低油菜硫苷含量≥25.0μmol/g,芥酸含量≥0.30%,质量变差;酸雨pH值≤1.5,硫苷含量≥30.0μmol/g,芥酸含量≥0.40%,超过国家质量标准要求而不能进入市场。[结论]酸雨对双低油菜籽粒品质下降有重要的影响。[ Objective ] The scientific basis of the regulation of agricultural product quality and the control of acid rain impacting the crop quality was provided based on the ecological environmental management through the study the effect acid rain on the indicators of double low rapeseed quality. [ Method ] The double-low rapeseed variety Qinyou No. 7 being taken as experimental material, the experiment in the simu- lated acid rain in field grown with the variety was conducted and the content of glucosinolate and erucic acid and other indexes, affecting the quality of double-low rapeseed were studied under the stress of acid rain. [ Results ] With the acidity-increasing of acid rain, the content of glucosinolate, erucic acid, linoleic acid and arachidic acid in rapeseed grain was increased, but the content of protein, amino acid, crude fat, soluble sugar, stearin acid and oleic acid was reduced. The content of the reduced sugar, total acidity and the linolenic acid in double-low rapeseed grain was firstly increased and then reduced with the variation of pH value of acid rain. The content of glucosinolate was ≥25.0μmol/g in double-low rapeseed grain while the pH value of acid rain was ≤3.5 and erucic acid, ≥0.30%, which product was bad quality. While the pH value of acid rain was ≤1.5, the content of glucosinolate was ≥30.0 μmol/g and erueic acid, t〉0.40%, which product was not sold as food product in market because its quality index was not met by the demand of the national quality standards. [ Conclusion ] The acid rain resulted in the heavy quality-declining of double-low rapeseed grain.
