摘　　要：小麦蛋白质是人类所需蛋白的重要来源,小麦蛋白质的含量和品质不仅与基因型有关,也受环境的影响,且许多研究表明后者比前者更重要。此文综述了温度、光照、水分和土壤等环境因素对小麦蛋白质影响的部分研究结果及存在的主要问题。在此基础上展望了小麦蛋白质研究的发展方向。The protein of wheat is the important resource needed protein for human.The content and quality of wheat protein not only depends on genotypes,but also affected by environmental factors.A lot of research results confirmed that the latter is more important than the former.This paper summarized the main research results and some problems about environmental effect on wheat protein,and looks forward to the research trend of wheat protein.
