摘 要:通过对盘锦地区环境因素的分析,探讨了土壤、气候以及水源对稻米品质的影响,揭示了盘锦大米品质与产地环境的关系。结果表明,盘锦地区土壤为盐碱型,并包含火山灰成分,使其富含丰富的养分;盘锦地区昼夜温差大,灌浆期降温缓慢,日照充足,空气质量良好;水源充沛且洁净等因素使得盘锦大米垩白面积小,气味清香,糊化温度低,胶稠度高,直链淀粉含量适中,蛋白质和微量元素含量高,其独特的产品特色与环境因素密切相关。Through the analysis of the environmental factors in Panjin area, the effects of soil, and climate and water sources on the rice quality were discussed. The relationship between the quality of Panjin rice and the environment of producing areas was revealed. The results showed the environmental factors were the salinity soil with eruption which was rich in nutrient,large difference temperature between day and night, slowly temperature dropping in grouting peried,adequate lighting and good quality of air,abundant and clean water. At the influence of all the environmental factors,Panjin rice had excellent qualities such as small area ckalk,smell fragrant,lower gelatinization temperature,higher gel consistency, moderate amylose content, higher protein and trace elements. Its unique product characteristics were closely related to environmental factors.
