摘  要:目的:利用鹿胎下脚料为原料制备复合氨基酸.方法:采用微波辅助酸水解法处理鹿胎下脚料,利用Folin-酚法测定蛋白质含量,甲醛滴定法和凯氏定氮法测定氨基酸水解度,氨基酸自动分析仪测定氨基酸种类和各自含量.结果:在微波辅助处理30 min条件下,所得到复合氨基酸水解度最高,达8.27%.复合氨基酸中含有谷氨酸、甘氨酸、丙氨酸、亮氨酸等17种氨基酸.结论:利用微波辅助酸解法处理鹿胎下脚料可获得高质量复合氨基酸,生产成本低,具有一定的推广应用价值.Objective: To prepare compound amino acids from the leftovers of embryo cervi. Methods: Microwave - assisted acidolysis method was used to treat the leftovers of embryo cervi. Folin - phenol method, formol titration and Kjeldahl determination were respectively used to determine the protein content and hydroly- sis of amino acids. Automatic amino acid analyzer was used to analysize amino acid. Results: The leftovers of embryo cervi were acidolysised after microwave - disposed 30 min, compound amino acids were obtained, and the hydrolyzable degree was 8.27%. Compound amino acids included such 17 kinds of amino acids as gluta- mate, glycine, alanine, leucine, et al. Conclusion: High - quailty of compound amino acids could be not only obtained through utilization of the microwave - assisted acidolysis method with which treat the leftovers of embryo cervi, but also the cost of production was lowed, showing that this technology could be widely applied.
