摘  要:以二月兰(Orychophragmus violaceus)花瓣为试材,研究了花色苷的提取方法及其稳定性。结果表明,在65℃条件下,用75%乙醇+0.5%盐酸浸提5 h效果最佳。高pH值对花色苷影响显著,在酸性条件下花色苷有良好的热稳定性。Na+、Ca2+、Mg2+对花色苷影响不显著;Cu2+影响较显著。花色苷的抗还原性、抗氧化性差。葡萄糖、蔗糖和柠檬酸对花色苷无显著影响。The extraction conditions and stability of anthocyanin from petals of Orychophragmus violaceus were studied.The results showed that the optimum anthocyanin yield could be extracted from petals of Orychophragmus violaceus by using 75% ethanol + 0.5% hydrochalloridde for 5h at 65℃.The high pH(12) had a significant effect on anthocyanin and the anthocyanin was of good heat stability under the acidity condition.Cu2+ had a significant effect on anthocyanin,and Na+,Ca2+ and Mg2+ had no significant effect on anthocyanin.The anti-reduction and anti-oxidization of anthocyanin were bad.Glucose,sucrose and citric acid had no significant effect on anthocyan.
