摘  要:以9种不同醇化时间和不同等级的云南K326烤烟品种为研究对象,用近红外光谱技术对其主要化学成分进行检测,并测定其pH值。结果表明:随着醇化时间的延长,烟叶中总氮、烟碱和挥发碱的含量均有下降趋势;蛋白质含量没有明显变化;还原糖、总糖和纤维素的含量没有规律性变化,三者含量的变化与烟叶等级相关。对于上部烟叶(B3F),还原糖含量先上升后下降,总糖含量逐渐下降,纤维素含量先下降后上升;对于中部烟叶(C3F),还原糖含量逐渐上升,总糖含量先下降后上升,纤维素含量逐渐上升;对于下部烟叶(X3F),还原糖含量先下降后上升,总糖含量先下降后上升,纤维素含量先上升后下降。随着烟叶醇化时间的延长,烟叶pH值逐渐下降,其中中部烟叶(C3F)的pH值变化幅度最小。The main chemical components in nine Yunnan flue-cured tobaccos cv.K326 sampled at dif-ferent alcoholization durations and grades were determined by Near-infrared Spectroscopy technique and the pH of the samples was also detected.The results showed that:1) the contents of total nitrogen,nicotine and alkali decreased with the extension of aging time,and that of protein did not change obviously;2)the contents of reducing sugar,total sugar and cellulose changed irregularly,which were closely related to the tobacco grades.For tobacco leaves B3F,the content of reducing sugar increased and then decreased,the content of total sugar decreased gradually,and the content of cellulose decreased and then increased;for tobacco leaves C3F,the content of reducing sugar increased all the time,the content of total sugar decreased and then increased,and the content of cellulose increased;for tobacco leaves X3F,the content of reducing sugar decreased and then increased,the content of total sugar decreased and then increased,and the content of cellulose increased and then decreased;and 3) the pH of the tobacco leaves decreased with the prolongation of aging time,and the pH of the middle tobacco leaves changed less than that of upper and lower tobacco leaves.
