摘 要:[目的]了解直接入口食品中变形杆菌的污染状况。[方法]对丰台区9类餐饮业7种直接入口食品进行了调查,检测方法按照WS/T9-1996进行。[结果]调查的1129件食品中检出变形杆菌117株,检出率为10.36%,其中奇异变形杆菌占71.8%;夏秋季检出率高于冬季,8月份高达33.57%;熟肉制品及凉拌菜中变形杆菌检出率高,分别为20.00%和12.07%,炝拌菜、爆炒菜和盒饭全餐中则未检出变形杆菌。[结论]直接入口食品中变形杆菌的污染比较严重,以奇异变形杆菌为主,夏秋季严重,污染的高危食品主要是熟肉制品及凉拌菜。[ObjectiveJ To find out the contamination of Proteus in directly edible food, [MethodsJ 1 129 food samples from 9 kinds of restaurants were tested according to WS/T 9-1996. [ Results] 117 strains were separated from 1 129 samples and the positive rate was 10.36%.71.8% of ProteuS was Proteus Vu!garis, The positive rate in autumn was higher than that in win- ter and the highest was in August (33.57%). The positive rate of Proteus in cooked meet was the highest (20,00%) and that in acetarious food was the second(12.07%). [Conclusion3 The Contamination of Proteus in direcdy edible food is serious and the major Proteus is Proteus vulgaris. The serious contaminated season is autumn and the major contaminated foods are cooked meat and acetarious food.
