摘　　要：甘油二酯(DG)是一种健康食用油。近年来,1,3-甘油二酯(1,3-DG)因其广泛用途日益受到人们的重视。甘油二酯是油脂的天然成分,同时也是一种多功能添加剂,在食品、医药、化工等行业有广阔的应用前景。评述了甘油二酯的制备、纯化方法和功能研究现状,对其应用情况作了介绍,展望了其开发前景。Diglyceride（DG）is a sort of healthy edible.1,3-DG,because of its multifunctional and nutritional properties,attracted considerable attentions recently.DG,as a multifunctional additives,is a nature component of fats and oils,which has been used extensively in food industry,pharmaceutical industry,chemical engineering industry and so on.The research situations on the preparation,purification methods and functions of diglyceride were reviewed.The application situations of diglyceride were introduced.And its development prospects were predicted.
