摘  要:目的 观察醋大蒜液杀菌效果及其影响因素.方法 应用悬液定量杀菌试验观察醋大蒜液杀菌效果及温度、pH、有机物对杀菌效果的影响.结果 醋大蒜液原液对悬液中大肠杆菌作用10min、对金黄色葡萄球菌作用15min、对白色念珠菌作用25min、对副溶血弧菌作用30min,杀灭率均达到100%.在试验条件下,菌悬液中含10%以上小牛血清对其杀菌效果有影响,温度在10~35℃内杀菌效果无明显影响.结论 醋大蒜液对细菌繁殖体、真菌和副溶血弧菌具有较好的杀菌效果.Objective To observe germicidal efficacy of garlic solution with vinegar its intluencing factors. Methods The quantitative solution germicidal test was performed to observe the germicidal efficacy of garlic solution with vinegar, as well as to observe the influences of temperature, pH and organic substances. Results The results showed that the killing rates of Escherichia coli in suspension exposed to the stock solution of garlic solution with vinegar for 10rain, Staphylococcus aureas exposed for 15 min, Candida albicans exposed for 25min and V. para- haemolyticus exposed for 30min were 100%. Under the test conditions,higher than 10% calf serum in the bacterial suspension had influence on its germicidal efficacy.Temperature with in 10 -35℃ had no obvious influence on its gennicidal efficacy. Conclusion The garlic solution with vinegar had good efficacy in killing vegetative form of bacteria as well as fungi and V. parahaemolyticus.
