摘  要:用乙醇作为提取溶剂,以提取得率和色价为评价指标,通过单因素实验,探讨料液比、提取温度、超声功率、提取时间、乙醇体积分数对色素提取效果的影响;通过正交实验优化提取条件,并对提取的色素进行了稳定性考察。实验结果表明:虎杖色素的最佳提取工艺条件为乙醇体积分数80%,料液比1∶30,超声温度25℃,超声功率50 W,超声时间20 min,其中料液比为显著影响因素;虎杖色素对热、光、蔗糖、NaCl、维生素C(Vc)等因素的影响较稳定,而pH、H2O2、柠檬酸对虎杖色素稳定性影响较大。The ultrasonic assisted extraction of pigments from Polygoni cuspidate and their stability were studied.Ethanol was used as a solvent,extraction yield and color value were treated as a evaluation indicator.The solid-to-liquid ratio,extracting temperature,ultrasonic power,extracting time,and the volume fraction of ethanol were studied to determine the effect on the extraction by single-factor test.The extraction technology was optimized by the orthogonal test and the stability of pigment obtained was also inspected.The results showed that the optimum extraction conditions were as follows: ethanol fraction 80%,solid/liquid ratio 1∶30,temperature 25 ℃,ultrasonic power 50 W,and ultrasound time 20 min.The solid to liquid ratio was the most significant influencing factor.The obtained pigments showed good stability to heat,light,sucrose,NaCl and Vc,and the stability to pH,H2O2 and citric acid was not good.
