环糊精包埋增强白藜芦醇水溶性的研究

摘　　要：白藜芦醇具有抗氧化,抗心血管疾病等多种药理作用,但因其难溶于水,限制了它在食品及医药领域的广泛应用。本文利用羟丙基-β-环糊精对白藜芦醇进行分子包埋,使其在水中的溶解度达到33.07g/L,方便了白藜芦醇在实际领域中的应用。Resveratrol has shown a strong antioxidation and anti-cardiovascular disease activity,but its poor water solubility limited its direct usage in food and medicine.In this paper,the inclusion of resveratrol by β-cyclodextrin was carried out and by the way of controlled release from the complexationt,he resveratrol water-solubility have improved up to ten thousand times,and the product is easy to be used in practice.
