摘　　要：主要对鳗鱼骨钙酸法提取的工艺进行研究。在单因素实验基础上,采用L9(34)正交实验,探讨了盐酸浓度、用量、温度、时间对鳗鱼骨钙溶出率的影响。结果表明:影响鳗鱼骨钙溶出率的主次顺序为反应时间(D)>盐酸浓度(A)>盐酸用量(B)>反应温度(C);鳗鱼骨钙溶出率最佳组合为A3B1C1D3,即盐酸浓度为3mol/L、盐酸用量4mL、反应温度108℃、反应时间60min,该条件下鳗鱼骨中的钙溶出率达到最大,鳗鱼骨钙溶出率为22.29%。方差分析结果表明:盐酸浓度(A)、盐酸用量(B)、反应温度(C)、反应时间(D)对钙溶出率影响均非常显著。It is mainly focused on the techniques of acid extraction of calcium from eel bone.Based on the single-factor experiment,it discuss the influence of the concentration of hydrochloric acid,dosage,temperature,and duration on the calcium dissolution rate in eel bone.The result showed theprimary and secondary order of the factors that influence calcium dissolution rate,which is reaction time（D）〉density of hydrochloric acid（A）〉the dosage（B）the temperature（C）.The best combination as for the best experimental result is A3B1C1D3,viz.the hydrochloric acid is 3 mol/L,the dosage to be 4 mL,reactiontime to be 60minutes,temperature to be 108 ℃.1 g eel bone can dissolve out 22.29% calcium.Analysis of variance results show that：the density of hydrochloric acid（A）,the dosage（B）,the temperature（C）,the reaction time（D） have significantly influence on the extraction of calcium.
