摘 要:[目的]掌握与炊事员工作有关的疾病及其影响因素。[方法]采用职业流行病学调查方法,对400名炊事员和322名非炊事员工作有关的疾病及其影响因素进行调查。[结果]炊事员主要疾病为循环系统和呼吸系统疾病,分别占全病因的33.61%和28.92%,与对照组比较,标化发病比分别达1.93、1.58(P﹤0.05)。选择工种、工龄等11个变量进行单因素非条件Logistic回归分析,控制年龄、性别等因素后,作业环境、工龄在模型中均具有统计学意义(P﹤0.05),相对危险度前者分别为1.39、1.18,后者分别为1.20、1.50。[结论]开展炊事员工作有关疾病的预防,重点在改善劳动卫生环境上。[Objective] To master cooks in their work-related diseases and its influencing factors. [Methods] 400 cooks and 322 non-cooks were investigated to understand their work-related diseases and its influence factors by using the occupational epidemiological methods. [Results] The main work-related diseases of cooks were the circulatory system and the respiratory system diseases,which accounted for 33.61% and 28.92% of all causes. Compared with the control group,the standardized incidence rate reached to 1.93 and 1.58(P﹤0.05) . We chose 11 variables,such as type of work and work year,to perform single factor non-conditional Logistic regression analysis. After controlling age and sex,the working condition and working age showed significant difference in the model(P﹤0.05) . The former relative risk were 1.39 and 1.18,and the latter were 1.20 and 1.50. [Conclusion] In order to perform prevention work-related diseases for cooks,we should emphasis on improving the working environment.
