摘  要:以金钟花花瓣为试验材料,研究了其花色苷的最佳提取方案及稳定性。结果表明,用95%乙醇和1%盐酸在45℃条件下浸提7h,效果最佳。pH值对金钟花花色苷稳定性影响显著;Na+、Cu2+、Ca2+对花色苷稳定性影响不显著,Zn2+对其影响显著;花色苷的抗氧化性好,抗还原能力较差;葡萄糖、蔗糖等食品添加剂对金钟花花瓣花色苷无影响,柠檬酸对其影响较大。The extraction and stability of anthocyanin was studied with the petal of Weeping Forsythia.The result indicated that the optimum yield of anthocyan could be obtained by 95% ethanol and 1% hydrochloride at 45℃ for 7h.The pH had significant effect on the anthocyan.If pH is lower,the anthocyan was suituable to keep its good heat resistance.Na+,Cu2+,Ca2+ had no effect on the anthocyan,but Zn2+ had greater effect.The anthocyan had better oxidizability and worse reducibility.Glucose and Slucose had no effect on the anthocyan,but the citric acid had greater effect.
