摘　　要：天然色素因安全无毒、色泽自然、营养价值高、药理功效好等优点,而得到广泛应用和快速发展。文章介绍了天然色素的几种提取、纯化方法及原理,比较了各种方法的优缺点,并对天然色素的研究与开发做了一定的展望。Because of innocuity,natural custer,high nutritional value,good pharmacologic efficiency and so on,natural pigment has been extensively used and gotten rapid development,because of its advantages of innocuity,natural luster,nutritional value,pharmacologic efficacy and so on.The extracting and purifying methods and its principle on natural pigments were introduced.The advantages and disadvantages of all the ways were compared.The prospect of the research and development of natural pigments was forecasted.
