摘 要:应用拉曼光谱技术,分析了亚油酸自氧化过程及紫外辐照对亚油酸氧化反应的影响。结果表明:δ(=CH)的特征峰1266cm-1和(=CH—H)中C—H伸缩振动标志峰3014cm-1的强度逐渐减小并随着时间的延长而消失,说明随着氧化反应的进行双键消失或者含量减小;ν(C=C)和羧酸中C=O振动的标志峰1658cm-1的强度先增大再减小,说明在反应初期由于碳链的重排和羧酸的生成使其增大,在反应后期亚油酸中的羧基和反应生成的羟基酸、羟基醛脱水,使羧基C=O含量减小。紫外辐照加快了氧化反应的启动,提高了氧化反应的速度。实验结果说明拉曼光谱谱峰变化能表征脂肪酸氧化过程中基团的变化以及辐射处理对脂类物质氧化的影响,为脂质过氧化反应机理的研究提供了一种行之有效的研究手段。The authors studied on self oxidation of linoleic acid and the effect of UV irradiation on oxidation of linoleic by Raman spectroscopy.The result reflects that:the intensity of 1 266cm-1 which stands for =CH olenic hydrogen in-plane bend is diminished,and it disappeared at 72 hours after the oxidation beginning.That indicates that double bond was lost or reduced.ν(C=C)and the carboxylic acid C=O vibrations are lies in 1 658cm-1.The intensity of 1 658cm-1 was increased in the beginning and decreased then.At the initial stage in the reaction,rearrangement of carbon chains and the formation of carboxylic acids caused the increasing.Later in the reaction,carboxyl of linoleic acid reacted with the generated hydroxy acids,hydroxy aldehyde.So it decreased.UV irradiation accelerated the oxidation reaction starting,increased the speed of the oxidation reaction.All the result shows that the changes of Raman spectroscopy indecate the changes of bulky group in fatty acid oxidation process and the effect of UV irradiation.It provides an effective research tool for the mechanism of lipid peroxidation reaction.
