摘　　要：针对目前中国本土餐饮企业发展中存在的问题,借鉴国外成功经验,从服务能力演进与知识利用的视角,探讨了中式餐饮企业的良性发展要把握服务能力从"手工"到"共同配置"的多层次、不同阶段、不同行程的工作方式变革,把握成功的餐饮企业服务能力的提升要以知识发展和使用为基础。Dealing with problems of the development of Chinese-style catering enterprises presently,and combining the successful experiences from foreign companies,the paper brings forward the model of service capacity evolution,and tries to propose some suggestions： grasping the healthy development of Chinese-style catering enterprises from ＂handicraft＂ to ＂common disposition＂ in multi-level and different phases and different routes,and at the same time,grasping the successful promotion of service capacity of Chinese-style catering enterprises is based on the development and utilization of knowledge.
