摘　　要：单宁是多酚中高度聚合的化合物,广泛存在于自然界中,主要应用于日化、食品、医药、制革等领域。简要介绍了植物单宁的性质、生理活性及应用,综述了单宁含量的经典测定方法以及现代测定方法,并对其发展前景进行了展望。Tannins are polyphenolic substances, which have high degree of polymerization, being widely exist in nature and mainly used in cosmetic, food, medicine, leather, etc. The characteristic, physiological activity and application of vegetable tannins were briefly introduced, and the classical and modern test methods of tannin content were also summarized. Finally the developing prospect was outlooked in this article.
