摘　　要：小麦是我国主要农作物，产量居世界之首。小麦的深加工对我国国民经济的发展以及社会稳定具有非常重要的作用，历来受到各级政府的高度重视。但就目前而言，其深加工发展的状况远不如玉米深加工的发展。随着我国小麦的连年丰收，制粉能力的过剩，小麦价格与玉米价格相近，供求关系长期处于卖方市场等原因，预计我国小麦深加工会出现一个较快的发展势头。Wheat is the major crop in China,output ranked first in the world. Deep processing of wheat on the development of national economy and Social stability has a very important role,has always attached great impor- tance by all levels of government. But now, it＇s deep provessing status to far less than the development of deep processing of corn. As Chings wheat harvest year after year, the surplus millimg capacity, wheat prices and corn prices are similar,long-term supply and demand in a seller＇s market and other reasons, deep processing of wheat is expected there will be a rapid development momentum.
