摘  要:采用盆栽与人工气候室相结合的方法,2007-2008年在河南农业大学科教示范园区,以强筋小麦品种郑麦9023为试验材料,研究花后高温胁迫对小麦籽粒蛋白质和淀粉含量的影响。结果表明,花后高温处理后,籽粒产量、蛋白质产量、淀粉产量、淀粉含量和支链淀粉含量均降低,蛋白质含量、清蛋白、醇溶蛋白、麦谷蛋白、直链淀粉含量、谷醇比和直/支比升高;从高温处理时期看,花后第20天高温胁迫的影响略大于花后第10天的。相关分析结果表明,花后高温处理后,籽粒蛋白质含量与清蛋白、麦谷蛋白、直链淀粉和直/支比呈显著正相关,籽粒淀粉含量与球蛋白和支链淀粉含量呈极显著正相关。Under pot-cultivated conditions at an experimental farm of Henan Agricultural University,strong gluten wheat cultivar Zhengmai 9023 was chosen to investigate the effects of post-anthesis high temperature stress(HTS) on protein and starch accumulation in wheat grains.HTS was carried out in a walk-in chamber where wheat plant in pots was treated with a temperature around 38℃ for 2 days(5 hours each day) at 10 days after anthesis(DAA) and 20 DAA,respectively.The results indicated that grain crude protein,albumin,gliadin,glutelin,amylose content,ratio of glutelin to gliadin and ratio of amylose to amylopectin increased under HTS but yield of grain,protein and starch reduced significantly.Starch content and amylopectin content also decreased obviously under high temperature conditions.Comparison with HTS of 10 DAA,the effects of 20 DAA was more serious.Correlation analysis revealed that grain protein content was positively correlated with content of albumin,glutelin and amylose,and the ratio of amylose to amylopectin.Starch content was positively correlated with content of globullin and amylopectin in grains.
