摘  要:目的以木薯淀粉为原料,NaIO4作氧化剂制备双醛淀粉。考察反应时间、反应温度、pH、NaIO4与淀粉摩尔比、NaIO4浓度等因素对产品中双醛含量的影响。方法利用NaIO4具有对邻二羟基的专一性氧化,将脱水葡萄糖单位的C3和C2氧化成醛基,即可得双醛淀粉。结果实验得出的最佳制备条件为:NaIO4与淀粉摩尔比为1.1∶1,NaIO4浓度为0.6mol/L,反应时间为2h,pH=2,反应温度为40℃时,产品中双醛含量可达90%以上。结论控制适当的反应条件,双醛淀粉可以达到较高水平的转化率。Aim The dialdehyde starch is synthesized with cassava starch as raw materials and NalO4 as an oxidant. The effects of reaction time, reaction temperature, pH, the mole ratio of NalO4 to cassava starch and NalO4 concentration on the dialdehyde content in the product are investigated. Methods The dialdehyde starch was obtained by periodate which has exclusive oxidation of ortho-dihydroxyl, to transform the C^3 and C^2 in anhydroglucose unit into aldehyde groups, i. e, dialdehyde starch formation. Results The experimental results show that dialdehyde starch could be prepared at 40 ℃ for 2 h with other conditions that the mole ratio of NalO4 to cassava starch 1.1 : 1, NalO4 concentration 0.6 mol/L and pH=2, dialdehyde content in the product mixture is over 90%. Conclusion The high conversion rate of dialdehyde starch is achieved at moderate conditions.
