摘　　要：目的对昆山市出口加工区推行食品安全相关资料备案承诺管理模式前后餐饮服务食品安全监管工作质量进行综合评价,为今后更好地开展餐饮服务食品安全监管提供参考依据。方法采用密切值法综合评价出口加工区餐饮服务食品安全监管质量,标化处理健康检查,监督覆盖率、餐饮具监测等结果,通过比较分析出口加工区推行食品安全相关资料备案承诺管理模式前后餐饮服务食品安全监管质量的变化。结果密切值C2010<C2009<C2008<C2007,出口加工区推行食品安全相关资料备案承诺管理模式后餐饮业食品安全监管质量明显好于实施前。结论密切值法有较大的应用潜力,备案承诺制度改变了企业职工以往模糊消费的状况,再次提升了集体用餐配送单位许可证、健康证持证率,食品安全隐患得到有效遏制。[Objective] To implement comprehensive evaluation on quality of catering service and food safety administration in export processing zone of Kunshan City before and after management mode of food safety related data record and commitment,and provide reference for carrying out catering service and food safety administration well in the future.[Methods]Osculating value method was adopted to evaluate the quality of catering service and food safety administration in export processing zone .Results of health examination,supervision coverage,tableware monitoring,etc were standardized.The quality change of catering service and food safety administration in export processing zone before and after management mode of food safety related data record and commitment was analyzed.[Results]Osculating value C2010C2009C2008C2007.After implementation of management mode,the quality of catering service and food safety administration was significantly better than before.[Conclusion]Osculating value method has great potential in application.Record and commitment system has changed the previous fuzzy consumption of workers,has improved the holding rate of collective meal delivery permit and health certificate,and has effectively curbed food safety hazards.
