1例冷藏猪脑中2种致病菌的分离及系统发育分析

摘  要:[目的]为了解生肉类食品的安全性,针对火锅城食用生肉类食品中的单核细胞增生性李斯特菌及金黄色葡萄球菌进行检测。[方法]按照GB4789.30-2008、GB4789.10-2008对相关菌株进行检测。[结果]从1例火锅食用冷藏猪脑中同时分离出2种致病菌,单核细胞增生性李斯特菌(简称100105A)及金黄色葡萄球菌(简称100105B)。并对菌株100105A、100105B其形态特征、生理生化鉴定以及对菌株100105A进行了16S rDNA序列进行了分析,确定了其系统发育关系,并研究了100105A菌株在10℃,4℃,-10℃低温下的生长情况。该菌株在10℃,4℃,乃至-10℃下,显示出较强的繁殖能力。[结论]冰箱冷藏保存,对食品安全性也存在一定风险。[Objective]In order to understand the safety of fresh meat,we examined the properties of Listeria monocytogenes and Staphalococcus aureus isolated from fresh meat consumed in hot pot restaurants.[Methods]Strain 100105A and 100105B was identified according to GB4789.30-2008 and GB4789.10-2008.[Results]Two pathogens were obtained from pig brain,and they were Listeria monocytogenes(100105A)and Staphalococcus aureus(100105B)respectively.100105A was identified according to its morphology,and biochemical properties,and 16S rDNA sequence analysis.The phylogenetic tree was produced based on the 16 S rRNA gene sequence of strain 100105A and 5 Listeria species.Strain 100105A showed strong ability to reproduce at 10℃,4℃,-10℃.Another strain 100105B was also identified as Staphalococcus aureus according to GB4789.10-2008.[Conclusion]Keeping food in refrigeration also had a certain risk in food safety.
