摘 要:以稻壳为原料制备稻壳醋液,采用气-质联用仪分析了稻壳醋液的主要化学成分,并研究了不同稀释比的稻壳醋液对真菌类和细菌类中有代表性菌株的抑菌和杀菌性能。试验从稻壳醋液中鉴定出39种有机组分,其主要成分为酚类、酸类、酮类、醇类、酯类、醛类及其它组分。抑菌性能测试试验表明稻壳醋液有较好的抑菌作用。在作用8 min的条件下,醋液-水稀释比为1∶2,1∶1,1∶2,1∶1(体积比,下同)的稻壳醋液分别对黑曲霉菌、白色念珠菌、大肠杆菌、金黄色葡萄球菌达到100%的抑菌率。杀菌性能研究试验表明稻壳醋液有较好的杀菌作用。在作用8 min的条件下,稀释比为1∶1的稻壳醋液对4种指示菌的杀菌率均达到100%;稀释比为1∶3,1∶2,1∶3的稻壳醋液对黑曲霉菌、白色念珠菌、大肠杆菌分别达到91.5%、92.5%、92.2%的杀菌率。结果表明稻壳醋液有较强的抑菌和杀菌作用。Rice husk vinegar fluid was prepared using the rice husk as raw material,and the main component was analyzed by the gas chromatography-mass spectrum.The inhibitory and germicidal performances of rice husk vinegar fluid toward the representative strains in the eumycetes and bacterium classes under different dilution ratio were studied.39 Kinds of organic components were identified from the rice husk vinegar fluid,its principal constituents contain phenols,acids,ketones,alcohols,esters,aldehydes etc..Inhibitory performance test results show that under the condition of action for 8 min,using the dilution ratio 1∶2,1∶1,1∶2 and 1∶1 respectively,the rice husk vinegar can respectively have 100 % inhibitory rate to word Aspergillus niger,Candinda albicans,E scherichia coli and Staphylococcus aureus.Germicidal performance test results show that under the condition of affecting 8 min,at the dilution ratio of 1∶1,the rice husk vinegar can have 100 % germicidal rate toward the four indicated bacteria.At the dilution ratio of 1∶3,1∶2 and 1∶3,the rice husk vinegar can respectively have 91.5 %、 92.5 %、 92.2 % sterilization rate toward A.niger,C.albicans and E.coli.The rice husk vinegar fluid has strong inhibitory and germicidal performances.
