摘 要:目的对爱丽思蜜糖金桔皮中的色素进行提取,同时研究温度、光照、氧化剂、还原剂、常见金属离子和食品添加剂对色素稳定性的影响。方法采用分光光度法对该色素进行分析测定。结果该色素提取的较优条件为乙醇体积分数70%,提取温度50℃,提取时间60 min。该色素易溶于乙醇和酸性溶液,最大吸收波长为450 nm;热稳定性较好,光稳定性差,耐还原性较好,耐氧化性较差,在研究的7种金属离子中Fe3+及Cu2+对色素颜色有影响。结论该色素提取简单、原料易得、稳定性较好,值得进一步开发和利用。Objective Extraction conditions of pigments in Fortunella margarita were explored,and the effects of temperature,illumination,pH,oxidants,reducing agents,metal ions and food additive on the stability of the pigments were studied in this experiment.Methods The optimum extraction conditions were as following:70%ethanol solution as extraction solvent,temperature 50 ℃and extracting time 60 min.Pigments in Fortunella margarita dissolved to ethanol and acid solution easily.The highest wavelength was 450 nm.Results Pigments in Fortunella margarita were tolerant to high temperature,but its stability decreased under illumination.Pigments in Fortunella margarita were stable to reducing regents,but oxidant could damage to their stability.Fe^3+and Cu^2+could make the color of pigments in Fortunella margarita become light.Conclusion Those results would favor the utilization of the pigments in Fortunella margarita.
