摘 要:目的:分析不同产地大豆与绿豆中异黄酮及矿物质含量的变化,为人们合理选择提供实验依据。方法:采用钼酸铵分光光度法测定各产地大豆与绿豆中异黄酮的含量,原子吸收分光光度法测定其矿物质锌、铁和钙、镁、钾的含量。结果:东北、衡阳与海南大豆中异黄酮的含量分别为136.06%,99.12%和98.27%,绿豆中异黄酮的含量为0.0%,差异有统计学意义(P<0.05);大豆中矿物质锌、铁和钙、镁、钾的含量均比较高,其中海南大豆中锌、钾、镁的含量均高于东北、衡阳,而海南大豆中的铁、钙的含量均低于东北、衡阳;三地绿豆中所测的元素均低于相应地区大豆的含量,其差异均有统计学意义(P<0.05)。结论:大豆异黄酮和矿物质高于绿豆;东北大豆异黄酮高于南方,其保健功能更佳。Objective:By analyzing the content change of isoflavone and minerals of soybean and mung bean from different origin,provide a theoretical basis for people to make a reasonable choice.Method:Determinate the content of isoflavone,Trace Elements such as Zn、Fe and Macroelements such as Ca、Mg、K in soybean and mung bean from different origin by means of molybdate spectrophotometry and AAS.Results:The isoflavone's content of northeast soybean is the most,which is 136.06%.The isoflavone's content of soybean from Hengyang and Hainan is relatively low,which is 99.12%1 and 98.27% respectively.The isoflavone of mung bean is can not be measured in this experiment.The Macroelements content of soybean and mung bean is both more,the content of Mg and K in soybean and mung bean is increasing,while the content of Ca reducing,with the Northeast,Hengyang,Hainan geographically change,the content of isoflavone and minerals in soybean is more than that in mung bean(P0.05).Conclusion:the content of isoflavone and minerals in soybean is more than that in mung beans.The content of isoflavone in Northeast soybean is more than that in south,Health function is the best.
