小鼠模型水稻Fe/Se生物有效性快速检测研究

摘　　要：为研究不同水稻品种的Fe/Se生物有效性差异,分别用5个水稻品种(Ⅱ优838、协优46、Ⅱ优2070、协优9308、金优987)的稻米对小白鼠进行饲养,饲养时间为30 d,运用ICP(等离子体光谱仪)测定了小白鼠血清和稻米中的Fe/Se含量,计算两者的比值。结果表明,小白鼠的血清铁含量同喂食的稻米铁含量的比值从高到低为协优9308、Ⅱ优2070,Ⅱ优838,协优46,金优987,而血清硒含量同喂食的稻米硒含量的比值从高到低为Ⅱ优2070,金优987,协优46,Ⅱ优838,协优9308。即5个水稻品种的铁生物有效性从高到低为协优9308,Ⅱ优2070,Ⅱ优838,协优46,金优987,硒生物有效性从高到低为Ⅱ优2070,金优987,协优46,Ⅱ优838,协优9308。对于缺铁或缺硒人群,可选择合适品种稻米食用。In order to find out the bioavailability difference of iron and selenium between different rice breeds, the mice were fed with five varieties of rice （ Ⅱ you 838, Xieyou 46, Ⅱ you 2070, Xieyou 9308, Jinyou 987） for 30 days, the content of Fe and Se in mouse＇s serum and rice were measured by ICP to calculate the ratio. The experiment results showed that the ratio of the content of Fe between mouse＇s serum and rice was Xieyou 9308, Ⅱ you 2070, Ⅱ you 838, Xieyou 46, Jinyou 987 in a decline trend, and to Se was Ⅱ you 2070, Jinyou 987, Xieyou 46,Ⅱ you 838, Xieyou 9308. That is to say, the bioavailability of Fe in four varieties of rice was Xieyou 9308, Ⅱ you 2070, Ⅱ you 838, Xieyou 46, Jinyou 987 and Se in five varieties of rice was Ⅱ you 2070, Jinyou 987, Xieyou 46, Ⅱ you 838, Xieyou 9308. Therefore, to the people lacking of iron or selenium, Xieyou 9308 should be taken.
