摘  要:中国是世界上最大的小麦生产、加工和消费大国,面粉作为小麦的直接加工产品,在整个粮油工业和人们的日常饮食中具有举足轻重的地位和作用。进入21世纪,随着粮油生产流通市场化的推进,制粉工业快速发展,正在由销区向小麦产区和原料地转移,生产布局进一步调整,企业经济结构形成多元化格局,生产能力严重过剩,行业竞争更加激烈,目前行业已进入整合发展的新时期。China is a country with the world' s largest wheat production, processing and consumption. Wheat flour plays a decisive role in the whole grain & oil industry as well as in people' s daily diet as a directly processed product. In the 21st century, with the advancement of marketization of grain production and circulation, the milling industry develops rapidly and is being transferred from sales areas to the areas of wheat-producing and raw materials. The further adjustment of production layout, the diversified pattern of enterprises' economic structure, the overcapacity of production, all these have made the industry more competitive. Now the industry has entered a new period of integration and development.
