摘　　要：玉米赤霉烯酮(zearalenone,ZEN)是镰刀菌产生的一种雌激素类真菌毒素。ZEN对肝脏系统、免疫系统均有很大的危害,并且有引发肿瘤的可能性。鉴于ZEN及其衍生物在食品、农产品以及动物饲料中普遍存在并且危害较大,对ZEN及其衍生物的提取、净化及检测方法的研究作一综述,以期为同类研究提供参考。Zearalenone（ZEN） is a kind of estrogenlike mycotoxin producted by Fusarium.ZEN has great harm to both the liver system and immune system and has the possibility of triggering tumors.As ZEN and its derivatives commonly existed in agricultural products and animal feeds have great harmfulness,this paper reviews the extraction,purification and testing methods about ZEN to provide the references for similar studies.
