摘　　要：采用电感耦合等离子体发射光谱法(ICP-AES)对不同烹煮时间的鸡汤及加不同量冰乙酸烹煮的鸡汤中Ca、Mg、Fe、Cu、Zn等5种矿物质元素进行了分析研究。结果表明,不同烹煮时间的鸡汤中Ca、Mg、Fe、Cu、Zn溶出量有显著性差异(P<0.01),Ca、Fe的溶出量随着时间的增加而增加;加冰乙酸烹煮的鸡汤中Ca、Mg、Fe、Cu、Zn溶出量显著高于不加酸的鸡汤(P<0.01),Ca、Mg、Fe、Cu的溶出量随加酸量的增加而增加。The content of calcium, magnesium, fermm, copper, zinc in chicken soup with different cooking time and adding different amount glacial acetic acid was detected by ICP - AES. The results indicated that the contents of mineral elements above in chicken soup with different cooking time have significant difference （P 〈 O. O1 ） and the contents of calcium, fermm increases with time ; the contents of mineral elements above in chicken soup with glacial acetic acid are obvious hinger than no adding vinegar （P 〈 O. O1 ） and the contents of calcium, magnesium, fermm, copper increases with vinegar.
