摘　　要：本文对动物源性抗氧化物的种类(抗氧化肽、糖及其衍生物、酶类等)、分离提取及应用现状进行了综述。This article described the kind, extraction and application of animal origin antioxidans including antioxidant peptides, their derivants and enzymes.
