摘  要:测定了花羔红点鲑(Salvelinusmalma)和白斑红点鲑(S.leucomaenis)的肌肉营养成分,并对其进行比较。结果显示:(1)花羔红点鲑肌肉的蛋白质含量、脂肪含量均显著高于白斑红点鲑(P<0.05),而其灰分含量值则低于白斑红点鲑,但其差异并不显著(P>0.05);(2)花羔红点鲑在氨基酸总量、必需氨基酸含量和非必需氨基酸含量上显著高于白斑红点鲑(P<0.05),但两者在鲜味氨基酸含量上差异并不显著(P>0.05);(3)肌肉营养品质评价结果表明,花羔红点鲑肌肉必需氨基酸指数EAAI(70.44)明显高于白斑红点鲑(63.67)。研究结果表明作为土著品种的花羔红点鲑的肌肉营养价值要明显优于引进品种白斑红点鲑。The flesh compositions of Salvelinus malma and S.leucomaenis were analyzed.The results showed that,(1) crude lipid and crude protein content of S.malma flesh were significant higher than that of S.leucomaenis(P0.05),and the moisture and crude ash of S.malma flesh was lower than that of S.leucomaenis(P0.05);(2) the total amino acid,essential amino acid,non-essential amino acid of S.malma were higher than that of S.leucomaenis(P0.05),but there was no significant difference between their total delicious AA(P0.05);(3) the muscle nutritional quality evaluation results of S.malma and S.leucomaeni showed that the the EAA index of the former was 70.44,which was significant higher than that of the latter(63.67).The result showed that nutrition value of S.malma,a native species,was significant better than that of S.leucomaenis which was introduced from Japan.
