摘  要:以10头牛的肠、胃、肝脏、肌肉、脾脏、肾脏、心脏和胰脏等组织为研究对象,检测其铅和镉含量。结果表明:牛的肾脏、肝脏对镉有着较强的富集能力,均值分别达到209.4和44.5μg.kg-1,与其他器官相比达到显著水平(P<0.05);而牛肚、牛肠、肌肉、脾脏、心脏、胰脏中的镉累积量较低,尤其是肌肉,最低可至0.22 ng.kg-1。牛肚、肾脏对铅有较强的积累,与其他器官相比达到极显著(P<0.01),且其他器官中的铅含量相对较低。这一结论为制定牛肉制品,特别是可食用组织器官的重金属元素限量标准提供了理论依据,并为家畜可食用组织器官的重金属风险评估提供了参考。The contents of Lead(Pb) and Cadmium(Cd) in the bowels, stomachs, livers, kidneys, spleens,muscles, hearts and pancreas of 10 cattle were quantified in the present work. The result showed that both the kidney and liver had a strong ability in Cd accumulation with the mean content of 209.4 μg ·kg^-1 and 44.5 μg·kg^-1, respectively, which was significantly higher than that of other tissues and organs (P 〈 0. 05). In addition, the Cd contents of tripe, bowel, beef, spleen, heart, and pancreas were at low levels. Especially, the Cd content of muscles was as low as 0.22 ng/kg. Tripes and kidneys demonstrated remarkably the strong accumulation of Pb in comparison with other organs (P 〈 0.01 ). However, Pb contents of other organs were relatively lower. Therefore, the obtained data may provide the theoretical basis for formulating the beef limitation of heavy metal.
