摘 要:本工作研究了食品添加剂特丁基对苯二酚(TBHQ)的电子轰击质谱,结合其结构特征总结出一些裂解规律,并推导了在EI-MS中碎片离子的裂解机理。结果表明,特丁基对苯二酚的电子轰击质谱图中的主要特征离子有3个:分子离子峰m/z166、丢失一个甲基的碎片离子峰m/z 151和丢失一个甲基和中性碎片CO的碎片离子峰m/z123。另外,结合相关质谱图,探讨了主要碎片离子的裂解机理。Tert-butylhydroquinone(TBHQ) as a food additive was researched by electron impact mass spectrometry (EI-MS). Based on the analysis of fragments appeared in the mass spectrum, as well as the structure characterizations of these compounds, some frag- mentation rules were obtained. Results show that the El-MS of TBHQ produces three com- pound-specific fragment ions: the m/z 166 molecular ion, the m/z 151 fragment ion which resulted from a methyl group loss of the molecular ion, and the rn/z 123 fragment ion which resulted from a methyl group and the CO loss from rn/z 166. At the same time, based on the related mass spectrum, the fragmentation mechanism of TBHQ was discussed.
