摘　　要：从蔷薇科植物大棘的果中提取天然红色素，对提取条件进行了优化实验，并对色素的理化性能进行了研究。The natural red pigment is extracted from Pyracantha Fortuneana fruit. The extralting methods and agent is selected by experiments and physicochemical properties of the red pigment have been studied
