摘  要:研究蒸馏水、0.8%柠檬酸提取液、60%酸性乙醇3种提取剂对油棕嫩果皮中花色苷稳定性的影响。结果表明,酸性乙醇对油棕嫩果皮花色苷的提取率最高,达到542μg/g;3种提取液在272nm处有最大吸收峰.提取液中的组分均易溶于甲醇和丙酮;3种花色苷提取液在颜色的变化上随pH值变化一致;在目光照射和室内自然光条件下,花色苷柠檬酸提取液较为稳定,酸性乙醇提取液次之,蒸馏水提取液最差:在4-100℃的温度范围内,花色苷柠檬酸提取液较为稳定;蔗糖和葡萄糖添加量为20%时,对花色苷提取液基本无影响:花色苷柠檬酸提取液受金属离子影响较大.锌离子对花色苷提取液具有增色作用。The effect of three different extracting agents to the stability of anthocyanin from immature oil palm fruit peels was studied. The three extracting agents were distilled water, 0.8% citric acid solution and 60% acerbic ethanol. 60% acerbic ethanol had the most extraction ratio which could reach 542 μg/g. Anthocyanins extracted by the three agents could be dissolved in methyl alcohol and acetone. Color of the three extracted anthocyanin solutions changed unanimously with pH changing. The absorbency of the anthocyanin 0.8% citric acid solution had little change with 120 h sunshine or indoor natural light. The same phenomena happened when temperature ranged in 4 ℃ to 100 ℃. 20% supplement of sucrose or glucose had no effect to absorbency of all the three extracted anthocyanin solutions. Absorbency of anthocyanin 0.8% citric acid solution was affected badly by ions, and zinc ion had hyperchromicity to the three extracted anthocyanin solutions.
