摘  要:罗汉果具有丰富的营养和保健价值。为充分开发利用罗汉果资源,以罗汉果浆为主要原料,添加适量的稳定剂、调味剂研制而成罗汉果口服液。通过单因素和正交试验,并结合食品分析相关评定手段确定罗汉果口服液的产品配方。试验结果表明,以5%~10%的罗汉果浆、0.10%(W∶V)A和0.05%(W∶V)CMC-Na以及0.06%(W∶V)的柠檬酸混合,配制出的罗汉果口服液稠度适中,口感、色泽和稳定性良好。Momordica grosvenori swingle is rich in nutrition and healthcare value. In order to fully exploit its resources, the test uses the extract of the grosvenor momordica as the raw material, adding stabilizing agent and flavoring agent to develop the grosvenori oral liquid. Combining single factor and orthogonal experiment with the assessing method of food analysis, the paper determines the best product prescription for the mo- mordica grosvenori swingle oral liquid. The results show that when the prescription of the raw materials is designed as : the content of the siraitia grosvenori extract is 5 - 10% , A is 0.10% ( W : V) , CMC - Na is 0. 05% (W:V) , citric acid is 0.06% (W:V) , the products have such features as moderate viscosity, delicate taste , vivid colour and good stability.
