摘  要:本文分析了克山病、大骨节病区小麦不饱和脂肪酸及硒水平,结果表明两种病病区小麦在硒低的同时,多不饱和脂肪酸含量都明显高于非病区,多不饱和脂肪酸与硒含量之间呈负相关。并讨论了多不饱和脂肪酸相对过负荷在此两种病发病过程中的意义。Contents of Unsaturated fatty acids(UFA) and selenium in wheat from Keshan disease(KD) area and Kashin-Beck disease(KBD) areas were determined.Oleic acid, linoleic acid and linolenic acid cotents in wheat from KD endemic areas were 46%, 27% and 48% higher than nonendemic areas respectively. Oleic acid, linoleic acid and linolenic acid contents in wheat from KBD endemic areas were higher than nonendemic areas respectively. Selenium contents in wheat from endemic areas were markedly lower than those from nonendemic areas. There were negative correlation between the contents of UFA and selenium in wheat. In addition to the selenium deficiency, it is infer that PUFA overload and VE relative deficiency might also play an important role in the occurrence of KD and KBD.
