摘  要:在控制测试质量条件下,测定了大骨节病区和非病区麦面、玉米面和黄豆中硒铜锌锰铁钙磷含量。对比分析结果表明:病区麦面中硒铜量低于、铁锰钙量高于、玉米面和黄豆中硒锌量低于非病区。在病区里,黄豆富含铜锌钙磷、钙磷比值较合理,麦面次之,玉米面较差。麦面的铜锌钙磷锰铁量随碾磨度由粗到精依次减少。病区村民常食的麦面(80—90%)—玉米面(10—20%)主食中,锰铁偏多、锌磷不足、硒铜钙缺乏,是一种无机元素较不平衡的食物。文末讨论了提高病区村民主食中缺乏元素供应水平的方法。Cu,Zn,Ca,P,Mn and Se contents in wheat four,maize flour and soybenin affected and non-affected areas of Kashin-Beck disease were determined underthe quality control.Results have shown that Se and Cu contents in wheat fourare lower,but Fe,Mn,and Ca are higher in affected areas than in nonaffectedareas,and Se and Zn in maize flour and soybean in affected areas are lower.Cu,Zn,Ca and P contents are the highest in soyben and the lowest in maize flourof three kinds of food in affected areas.The ratio of Ca and P in soybean isnearly to the ratio of milk;Cu,Zn,Ca,P Mn and Fe contents in wheat arebeing reduced gradualy from coarse to refined flour.Compared with the standardsof personal nutritional amount(USA),the staple food consumed by the endemicresidents,which is made up of 80-90% wheat flour and 10-20% maize flour,contains excessive Mn and Fe,insufficient Zn and P and deficient Se,Cu andCa,so it is a kind of non-balanced food of inorganic elements.The approachesto iucrease levels of the deficient elemeuts in the staple food of endemicresidents are discussed.
