摘 要:[目的]研究不同处理方式对萹蓄中亚硝酸盐含量的影响,为消费者合理选用与处理中草药萹蓄提供科学依据。[方法]将不同区域采集的萹蓄样品(去根)用自来水洗涤干净,沥干。分别随机均匀分成3份,以室温散放(20~30℃);恒温烘干(60℃)和露天晒干3种方法进行处理,分别测定萹蓄样品中的亚硝酸盐含量。[结果]萹蓄在室温散放的条件下,其亚硝酸盐含量均数均随存储时间的增加而增加,其中48 h后均显著增加;萹蓄在烘干与晒干的条件下,亚硝酸盐含量均数均随煎煮时间的增加而增加;组间差异不显著。[结论]为提高食用和药用萹蓄的安全性,应选择荒野萹蓄,且储存时间不宜超过48 h。对萹蓄干样的煎煮时间应控制在6 min以内。干燥方式不影响萹蓄的亚硝酸盐含量。[ Objective ] The aim was to study effects of different treatment ways on nitrate content in HERBA POLYGONI AVICULARIS.[ Method ] HERBA POLYGONI AVICULARIS samples (removal roots) collected from different regions were clean by tape water. They were randomly divided into three treatments: room temperature (20 -30 ℃ ) ; drying in constant temperature (60 ℃ ) and insolation in open air, and the nitrate content in those samples were determined respectively. [ Result] Under the room temperature, the average nitrate content in-creased with storage time prolong, especially increased significantly after 48 h; under drying condition, the average nitrate content increased with decoction time prolong ; the differences among group were not significant. [ Conclusion ] In order to improve the safety of edible and medicinal HERBA POLYGONI AVICULARIS, the wild HERBA POLYGONI AVICULARIS should be selected, and the storage time should notexceed 48 h. The decoction time for HERBA POLYGONI AVICULARIS dry sample should be controlled within 6 min. The nitrate content could not be influenced by drying way.
