摘  要:建立了毛细管气相色谱法测定油脂中胆固醇含量的方法,改进了油脂皂化方法以及皂化完成后使用分液漏斗提取胆固醇过程中容易产生乳化、操作复杂且比较耗时的缺点,采用超声波提取胆固醇,优化了样品前处理条件。结果表明,该法在0.002 mg/mL~0.500 mg/mL范围呈线性(r=0.9997),检出限为20 mg/kg,RSD=1.104%,回收率在81.3%~93.8%之间。A method was established for the determination of cholesterol in oil by capillary gas chromatography,which improved oil saponification method and overcame the shortcomings that separatory funnel extraction of cholesterol was prone to emulsification and the operation was complex and time-consuming after saponification.Also,the use of ultrasonic extraction of cholesterol optimized the sample of pre-treatment conditions.The results showed that the method was suitable for detection,RSD= 1.104%,When cholesterol concentration was in fine linear relation(r=0.9997) with chromatogram peak area with in the range of 0.002~0.5 mg/mL,the detection limit of method was 20 mg/kg,the average recovery was 81.3%-93.85%.The method of detection of cholesterol in oil was economical,simple,rapid and efficient.
