摘 要:针对蔬菜质量安全与农业可持续发展的需求,综述了基于HACCP和GAP理论的蔬菜QACCP管理理论、核心技术与实施方法,提出了通过过程管理保障蔬菜质量安全、量化和数字化蔬菜技术标准和操作规范、质量分析关键点控制等技术理论,介绍了融合无线网络、专家系统、条形码等信息技术,建立和应用蔬菜QACCP管理体系的实践与展望。Keeping in mind the special characteristics of vegetable quality and safety and sustainable development of agriculture, based on the HACCP (Hazard Analysis and Critical Control Point) and GAP (Good Agricultural Practices) theory, the article summarizes the theory of QACCP (Quality Analysis of Critical Control Point) in vegetable management and the key technology and practice method. Instead of detecting pesticide residues of vegetable products, the QACCP management system is used to ensure the quality and safety of vegetables in the whole procedures of vegetable production managements, and its technical standard and manipulation method are quantized and digitalized, with the quality analysis of critical control point is pointed. Through the combining use of the agricultural information technologies, such as the wireless internet, expert system and bar code, the article introduces the practice and prospects of the establishment and application of vegetable QACCP management system.
