三类烤坏烟叶主要化学成分及其协调性的变化趋势

摘　　要：对嵩明、石林两地种植的烤烟品种——红花大金元烤青烟、杂色烟和枯焦烟三类烤坏烟叶进行研究表明:(1)检测的14项指标中,石油醚提取物和氮碱比不能作为衡量这三类烤坏烟叶的指标。(2)烤青烟叶的淀粉和挥发酸含量明显增加,烟碱含量变化不明显;杂色烟和枯焦烟的淀粉含量明显下降,挥发酸和烟碱含量明显增加。(3)这三类烤坏烟叶均表现为对评吸质量有利的总糖、还原糖、总多酚等指标明显下降,对评吸质量不利的蛋白质、总氮、挥发碱等指标明显增加,糖碱比、糖蛋比和糖氮比的协调性下降,下降或增加的幅度均以枯焦烟叶>杂色烟叶>烤青烟叶,导致各项化学成分指标低于优质烟叶合理范围,最终影响了烟叶的工业利用价值。The changes of main chemicals and their proportaion in three kinds of poorly-baked tobacco leaves,including green-yellow,variegated and scorched leaves of cultivar Honghuadajinyuan were investigated in the present work.The results showed that among 14 indexes detected,petroleum ether extract content and ratio of total nitrogen were unsuitable for the judgement of leaf quality.The contents of starch and total volatile acids increased obviously,however,nicotine content changed slightly in green-yellow ones.Starch contents decreased greatly,conversely,the contents of nicotine and total volatile acids increased remarkably.Three kinds of poor quality tobacco leaves displayed a tendency that the indexes beneficial for smoking quality including total sugar,reducing sugar and total polyphenol,decreased obviously,and that harmful for smoking quality,such as protein,total nitrogen and total volatile alkali,increased highly.The coordination of sugar-nicotine ratio,Shimuke value and ratio of reducing sugar to total nitrogen decreased.The degree of decline or increase were scorchedvariegatedgreen-yellow.Their chemical composition indexes were out of the range of high quality tobacco leaves,therefore their industrial value became worse.
