Intramuscular fat content is generally associated with sensory quality and acceptability of fresh pork. This study is conducted with the RT-PCR method to determine effects of nutrition levels on heart fatty acid-binding protein (H-FABP) gene expression and fatty metabolism in muscle in Guizhou miniature pig. A total of 24 Guizhou miniature pigs (male and female half) are randomly divided into four treatment groups, using a 2×2 factorial design to study the effects of dietary energy (DE13.3MJ/kg and DE11.8MJ/kg) and protein (17% and 14%) levels on meat quality traits and H-FABP gene expression in Guizhou miniature pig. The results indicate that the feed intake of 10-20kg Guizhou miniature pig among the four groups is not different (P〉0.05). The low energy or low protein levels decreases daily gain and feed conversion rate, but the difference is not significant. The H-FABP gene expression (P〈0.01), intramuscular fat content (P〈0.05) and muscle tenderness (P〈0.01) are increased for pigs fed high energy or high protein level. The relationship between H-FABP gene expression and intramuscular fat content is positive(P〈0.01). It is concluded that H-FABP gene expression and fatty metabolism in muscle are affected by dietary nutritional level.
