摘  要:研究了AS1.398中性蛋白酶、2709碱性蛋白酶、工业胰酶从经碱处理的含铬革屑中提取胶原水解物各因素的影响,如酶用量、pH和温度对胶原水解物提取率的影响,分别找出了3种酶提取胶原水解物的最适条件,测定了最适条件下所提取胶原水解物的蛋白含量、铬含量和灰分含量,并对3种酶的适用性进行了比较。结果表明:3种酶在各自的最适条件下所提取的胶原水解物蛋白含量、铬含量和灰分含量相近;AS1.398中性蛋白酶和工业胰酶较适合用于含铬革屑的胶原水解产物提取,其最高胶原水解物提取率分别为24.40%、25.07%。The chrome sludge obtained from alkali digested chrome shavings was used to extract collagen hyrolysate with AS 1. 398 protease, trypsin and 2709 protease. The main parameters that affect the extraction, such as the amount of the protease, pH and temperature were determined. The optimum extraction condition of the three proteases was found, and some properties of the extracted hydrolysate, such as total ash, chromium content and protein content were measured. The results show that the total ash, chromium content and protein content of the extracted hyrolysate yield by the three protease were very similar; AS 1. 398 pro-tease and trypsin were more suitable for the extraction of collagen, and the yields of collagen were 24.40%, 25.07%, respective-ly.
