摘  要:大量的事实表明,农药对农业发展的作用是毋庸置疑的,但是由于对农药的不合理滥用导致农药在植物体内,尤其是果蔬食品体内大量残留,严重危害了人类健康和生态环境。综述了目前降低果蔬农药残留的主要方法及技术和研究进展,包括物理、化学、生物方法,同时总结了不同条件下的降解效果和影响因素。探讨了植物激素——油菜素内酯和人造脉冲扫描光谱降低果蔬农药残留的新思路,并对今后的研究方向进行展望,为今后果蔬农药残留降解的应用和研究奠定理论基础。A large number of facts indicate that the role of pesticides in agricultural development is beyond doubt,but unreasonable abuse ot pesticides lead to pesticides in plants, especially in fruits and vegetables ,which is serious harm to human health and ecological environment. The current methods, techniques and research progress lowing pesticide residues in fruits and vegetables were reviewed, including the physical, chemical and biological methods,the degradation effects under different conditions and influencing factors were summarized. The new ideas of the plant hormones-scan spectra of brassinosteroid and artificial pulse to reduce pesticide residues in fruits and vegetables were discussed, and future research directions were put forward, which lay the theoretical basis for the application and research of the future pesticide residues in fruits and vegetables.
