摘 要:目的分析四角蛤蜊醇沉上清中脂肪酸及甾醇类成分。方法采用气相色谱-质谱(GC-MS)联用技术对四角蛤蜊醇沉上清中脂肪酸类、甾醇类成分进行分析与鉴定。结果共分离鉴定出35种脂肪酸,占总脂肪酸含量的97.74%,其中17种饱和脂肪酸的相对含量为54.52%,主要为十六烷酸、十八烷酸等;18种不饱和脂肪酸的相对含量为43.22%,主要为9-十六烯酸、6-十四烯酸、EPA等。共分离鉴定出10种甾醇,包括3种胆甾醇、3种麦角甾醇、2种豆甾醇、岩甾醇及雄甾醇各1种,其中胆甾醇含量最高为63.38%,其次为麦角甾醇20.81%与豆甾醇9.68%。结论以GC-MS联用技术分析了四角蛤蜊醇沉上清中的脂肪酸类、甾醇类成分,为四角蛤蜊资源的综合开发利用提供科学依据。OBJECTIVE The purpose of this study was to analyze the fatty acids and sterols from alcohol supernatant extraction of Mactra veneriformis. METHODS Fatty acids and sterols from alcohol supernatant extraction were analyzed and identified by gas chromatography-mass spectrometry (GC-MS). RESULTS 35 fatty acids were identified, representing 97.74% of the total fatty acids, in which the saturated fatty acid represent 54.52 % and the unsaturated fatty acid represent 43.22 %. The major components in saturated fatty acid were hexadecanoic acid and octadecanoic acid, and the major components in unsaturated fatty acid were 9-hexadecenoic acid, 6-tetradecenoic acid and EPA. 10 sterols were identified, containing three cholesterins, three ergosterols, two stigmasterols, fucosterol and androstanediol. Cholesterins represent 63.38% of total sterols, ergosterols represent 20.81 % and stigmasterols represent 9.68 % of total sterols. CONCLUSION Fatty acids and sterols from alcohol supernatant extraction of Mactra veneriformis were identified by GC-MS, and supply scientific basis for comprehensive development of Mactra veneriformis in the future
